Roasted Red Pepper

Serves: 2 people
Prep time: 30 minutes to the plate (active)

What you’ll need:

  • 2 medium sized red bell-peppers, sliced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp oregano
  • 1 tsp cumin powder
  • 1/2 tsp – 1 tsp paprika (scale back if sensitive to spice)
  • 1 tsp red pepper flakes
  • 1/4th tsp garlic powder
  • 1/4th tsp freshly ground pepper
  • 1/2 tsp – 1 tsp salt

What you’ll want to do:

  1. Heat the oil in a large pan or cast iron skillet over medium flame.
  2. Add the sliced bell pepper.
  3. Add all the spice powders except the red pepper flakes and pepper.
  4. The red pepper might take 15-20 minutes to start charring – be patient because this brings out the most delicious flavors!
  5. Finally season with the red pepper flakes and pepper.
